Creamy Banana Ice Cream
Ingredients
- 10% cream - 16 fl oz
- 3.2% Milk - 7 fl oz
- Sugar - 0.7 cups
- Egg white - 4 pieces
- Cognac - 1 tablespoon
- Ground Cinnamon - a pinch
- Banana puree - 1½ cups
Step by Step guide
Step 1
Combine the milk and cream in a deep saucepan with a thick bottom, place over heat, and bring to a boil.
Step 2
In a separate bowl, whisk the egg yolks in a double boiler, gradually adding the sugar. Whisk until the sugar is completely dissolved and the mixture reaches a thick consistency and a pale yellow or milky color. Stir in the cognac, add the cinnamon, and whisk again until you achieve a thick, homogeneous consistency. Remove from the double boiler.
Step 3
Once the milk and cream mixture has boiled, remove it from the heat and carefully incorporate it into the whipped yolks while constantly stirring. Pour the resulting mixture back into the saucepan and cook over medium heat until the cream thickens to the consistency of liquid sour cream. During cooking, constantly stir the cream, touching the sides and bottom of the saucepan to prevent burning. Do not allow it to boil. Remove from heat.
Step 4
Place the cream over a cold water bath. To do this, fill a large bowl halfway with very cold water and ice cubes. Place the saucepan with the cream on top. Occasionally stir the cream until it is completely cooled.
Step 5
Remove the saucepan with the ice cream from the water bath, tightly cover it with a lid, and place it in the refrigerator overnight for further cooling.
Step 6
For the banana puree, blend the bananas in a blender until smooth. Take the ice cream out of the refrigerator and quickly fold in the puree. Perform this step quickly to avoid the puree darkening. Pour the resulting mixture into the freezer and freeze according to the instructions for about 20–40 minutes. Transfer the finished ice cream to a container and place it in the freezer for at least 3 hours until fully set.
Step 7
If you do not have a freezer, immediately pour the ice cream into a container and place it in the freezer. Stir the contents of the container every 20–30 minutes until set.
