Creamy Coffee Ice Cream
Ingredients
- 3.2% Milk - 7 fl oz
- 10% cream - 7 fl oz
- Sugar - 3.2 oz
- Salt - a pinch
- Corn Starch - 3 teaspoons
- Medium ground coffee - 2 tablespoons
- Semi-soft cream cheese - 1.8 oz
Step by Step guide
Step 1
Dissolve the cornstarch in 50 ml of milk and set aside.
Step 2
In a small saucepan, combine the remaining milk, cream, salt, and sugar, stir, place over medium heat, and bring to a boil. Remove from heat, add the coffee, stir, cover the saucepan with a lid, and let it sit for 5 minutes. Then strain the mixture through a fine sieve lined with several layers of cheesecloth to remove all the grounds.
Step 3
Return the coffee milk to the heat, bring it almost to a boil, pour in the cornstarch milk, and cook, stirring constantly and not reducing the heat, until thickened. Remove from heat, add the cream cheese, and stir until smooth. Cool the mixture to room temperature, then refrigerate overnight.
Step 4
Pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions.
Step 5
If you don't have an ice cream maker, immediately pour the coffee mixture into a clean container, place it in the freezer, and stir the contents of the container every 20–30 minutes until frozen.
