- Sugar - 8.8 oz
- Cream - 24 fl oz
- Vanilla salt - 0.1 oz
- Egg white - 1 piece

Beat the egg yolks in a saucepan, mix with sugar and vanilla, rub together, and dilute with hot cream or milk, then place on the heat and cook, stirring constantly with a wooden spatula.
Step 2
When the mixture thickens slightly and the foam disappears from the surface, remove the saucepan from the heat, strain the mixture through a sieve, and cool it.
Step 3
Pour the cooled mixture into the ice cream maker, cover it with a lid, surround it with crushed ice mixed with salt (1 kg of salt for every 6-7 kg of ice), pack it tightly, and turn the ice cream maker. During the freezing process, add ice and drain water.
Step 4
Freezing continues for 30-40 minutes. When the ice cream becomes thick, open the container, remove the paddles, smooth it out, cover with a lid, and let the ice cream sit for an hour to firm up.
