Serve the ice cream with warm creamy sauce.
Ingredients
- 10% cream - 23 fl oz
- Sugar - 5.3 oz
- Egg white - 4 pieces
- Salt - a pinch
- Cream (40%) - 7 fl oz
- Vanilla salt - 1 piece
Step by Step guide
Step 1
Chop the vanilla pod and sugar in a food processor. Set aside (if using vanilla extract, add it to the whipped cream).
Step 2
Prepare the custard: place a three-liter pot on the heat and bring the low-fat cream to a boil. In a small bowl, whisk the egg yolks, salt, and sugar mixture. Gradually pour the hot cream into the yolk mixture. Pour this mixture into the pot and cook over medium heat, stirring constantly. (Do not let the mixture boil, or it will curdle.) Remove from heat.
Step 3
Strain the cream through a sieve into a clean large bowl. Add the whipped cream with vanilla. Mix well. Refrigerate for about 2 hours, or better yet, overnight.
Step 4
Whip and freeze in an ice cream maker.
