Crema Catalana
Ingredients
- Milk - 10 fl oz
- 10% cream - 7 fl oz
- Orange zest - 2 pieces
- Cinnamon - 1 piece
- Vanilla Pod - ½ piece
- Whole egg - 5 pieces
- Brown Sugar - 6 tablespoons
- Nutmeg - a pinch
- Sugar - 1.8 oz
Step by Step guide
Step 1
Preheat the oven to 302°F. Line the bottom of a deep baking tray with paper towels. Pour in water to a depth of 2 centimeters and place it in the middle of the oven.
Step 2
In a saucepan, combine the milk and cream, add the freshly grated zest from 2 oranges, cinnamon, and vanilla. Bring to a boil. Allow to boil and then immediately remove from heat. Remove the zest, vanilla, and cinnamon. Let the cream cool.
Step 3
Whisk the egg yolks with sugar until fluffy. Gently fold the mixture into the milk-cream mixture. Strain through a fine sieve.
Step 4
Fill the heatproof ramekins. The surface of the cream should remain smooth, without bubbles or foam. If necessary, carefully remove any foam.
Step 5
Place the ramekins in a water bath so that the water reaches only halfway up the sides of the ramekins. Bake the crema catalana in the oven for about 1 hour, until it thickens.
Step 6
Remove the ramekins from the oven. Allow to cool, then chill in the refrigerator.
Step 7
Just before serving, preheat the oven to maximum. Sprinkle the surface of each cream with a pinch of nutmeg and 1 tablespoon of brown sugar and place on the top rack. Remove as soon as the sugar caramelizes. It is important to do this in time, as the cream should not get too hot.
