Ingredients
- Milk - 17 fl oz
- Powdered Sugar - 5.3 oz
- Farm fresh eggs - 2 pieces
- Sugar - 3 tablespoons
- Wheat Flour - 1½ cups
- Butter - 2 tablespoons
- Vinegar essence - ½ tablespoon
- Activated Baking Soda - a pinch
- Mascarpone Cheese Unagrande - 17.6 oz
- 10% cream - 10 fl oz
- Vanillin - a pinch
- Chocolate - to taste
Step by Step guide
Step 1
Prepare the crepe batter: mix the eggs, sugar, and milk. Gradually add flour until the desired consistency is reached. Then add baking soda, quenched with vinegar, and melted butter.
Step 2
Cook the crepes. For the crepe cake, the crepes should be of medium thickness without holes.
Step 3
To prepare the cream, mix the cream cheese (such as mascarpone) with powdered sugar well (it's better to do this by hand).
Step 4
Whip the cream with an electric mixer, adding vanillin.
Step 5
Grate the chocolate (you can use half dark and half milk chocolate).
Step 6
Add the whipped cream to the cream cheese mixture and mix gently with a mixer. Add the grated chocolate and carefully stir until homogeneous.
Step 7
Assemble the cake: place the crepes on a plate, spreading each with the prepared cream. The height of the cake can be adjusted as desired, using as many crepes as needed. Cover the top of the cake with cream as well.
Step 8
The finished cake should be chilled in the refrigerator for at least 5 hours. The crepe cake can be decorated with chocolate or berries when served.
