Ingredients
- Egg white - 3 pieces
- Wheat Flour - 0.5 oz
- Sour Cream - 4.4 oz
- Mascarpone Cheese Unagrande - 8.8 oz
- Light Raisins, Seedless - 2.1 oz
- Vinegar essence - 0 fl oz
- Meyer Lemon Juice - 0 fl oz
- Sugar - 7.1 oz
- Citrus Zest Mix - 3 tablespoons
- Butter - 2.1 oz
- Thin Crepes - 12 pieces
- Chili jam - 8 fl oz
Step by Step guide
Step 1
Mix mascarpone, egg yolks, flour, sour cream, raisins, vanilla, lemon juice, and zest. Add 60 grams of sugar.
Step 2
Grease a 20 cm diameter baking dish with butter. Place 1 crepe at the bottom of the dish and spread a small amount of the cream, cover with another crepe and spread with jam. Repeat the layers, alternating cream and jam.
Step 3
Preheat the oven to 356°F. Whip the egg whites with sugar until stiff peaks form and spread on top of the cake. Bake for 20-25 minutes, reducing the temperature if the egg whites start to darken.
Step 4
Carefully transfer the cake to a serving plate, cut into pieces, and serve warm.
