Ingredients
- Chicken Egg - 2 pieces
- Sugar - ½ teaspoon
- Sparkling water - ½ cup
- Dry martini - 2 tablespoons
- Minced garlic - 0.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Sour Cream - 1 tablespoon
- Heavy cream - 1 fl oz
- Grated Chocolate - 2.1 oz
- Béchamel sauce - 3 fl oz
- Butter - 3 tablespoons
- Wheat Flour - 0 oz
- Milk - ½ cup
- Chopped Green Onions - 2 tablespoons
- Breadcrumbs - 1.8 oz
- Pizza Flour - 1 cup
- Condensed Milk - ¼ cup
- Dried Chinese mushrooms - 1.1 oz
- Chicken Broth - 1 cup
- Onion - 1.4 oz
- Pickled Chanterelles - 15.9 oz
Step by Step guide
Step 1
Combine the eggs, yolk, milk, and salt in a food processor. With the processor running, gradually add the flour and blend until a smooth, lump-free batter forms. Let it rest at room temperature for 30 minutes, then stir in the sparkling water. Heat a skillet over medium heat, grease it with half a teaspoon of melted butter, and cook the crepes.
Step 2
Soak the dried mushrooms in chicken broth for 30 minutes. Strain the mushroom water, finely chop the mushrooms. Melt the butter in a skillet and sauté the onion with garlic and mushrooms over medium heat until the onion is soft. Add the sliced champignon mushrooms and cook until they release their moisture. Increase the heat, pour in the water from soaking the mushrooms, and cook for 5 minutes until all the water is absorbed. Add the vermouth and simmer for another 2 minutes. Season with salt and pepper, then add the cream, sour cream, and half of the cheese; mix well. Reduce the heat to medium and simmer for 5 minutes until the sauce thickens slightly.
Step 3
Line the bottom of a greased 20 cm round cake pan with a circle of parchment paper. Place one crepe on the bottom and spread the filling evenly on top. Repeat, alternating crepes and filling, until all are used, ensuring a crepe remains on top. Mix the sauce with the remaining cheese and dill. Spread this mixture over the top crepe. Sprinkle with breadcrumbs and place butter on top.
Step 4
Bake at 401°F for 15 minutes, until the top is golden brown.
Step 5
Before serving, garnish with chopped green onions and a small mound of caviar.
