Ingredients
- Wheat Flour - 7.8 oz
- 3.2% Milk - 16 fl oz
- Farm fresh eggs - 4 pieces
- Water - 3 fl oz
- Vegetable Oil - 3 fl oz
- Salt - 0.2 oz
- Sugar - 9.9 oz
- Heavy cream - 8 fl oz
- Cheese Spread - 8.8 oz
- Strawberry - 3.9 oz
- Powdered Sugar - 0.4 oz
- Tarragon - 0.1 oz
Step by Step guide
Step 1
Prepare the batter. Whisk the eggs with 30 g of sugar and salt until slightly frothy.
Step 2
Add the milk, water, and sifted flour.
Step 3
Mix until smooth. Add the oil and mix again. If necessary, strain the batter through a sieve to remove lumps.
Step 4
Heat a skillet and cook the crepes until done.
Step 5
Prepare the filling. Whip the cream with sugar until stiff peaks form.
Step 6
Mash the cheese and fold it into the cream. The filling is ready.
Step 7
Next, prepare the strawberry tartare. Rinse the berries and remove the stems.
Step 8
Dice the processed strawberries, mix with chopped tarragon, and sprinkle with powdered sugar.
Step 9
Place two crepes side by side, overlapping. Spread 1/3 of the cheese filling evenly over the surface. Roll into a log lengthwise.
Step 10
Place the resulting log into the next two crepes. Roll again into a log.
Step 11
Repeat the process a third time. Wrap the resulting log in plastic wrap, compressing it slightly, and then wrap in foil.
Step 12
Leave in the refrigerator for 2 hours.
Step 13
Cut the finished log at a right angle. Coat one side with the tartare.
Step 14
Place in the center of a plate and sprinkle with the remaining tartare. Before serving, dust with powdered sugar.
