- Dry yeast - 0.7 oz

Step 1
To make the crepes, you need to bake wheat and buckwheat pancakes.
Step 2
Wheat pancakes: Beat 2 egg yolks, 3 g of salt, and sugar with a mixer, then add half of the milk to the beaten mixture, followed by 125 g of wheat flour. Mix everything, add half of the vegetable oil and 2 beaten egg whites, mix again and bake the pancakes.
Step 3
Buckwheat pancakes: From the remaining milk, 75 g of wheat flour, yeast, and 3 g of salt, make a sponge and place it in a warm place for 1-1.5 hours. Once the sponge is ready, add the buckwheat flour. Whisk the dough until smooth, add 2 beaten egg yolks and the remaining oil, mix, and let it sit in a warm place for 1 hour. When the dough rises, fold in 2 beaten egg whites, mix and bake the pancakes.
Step 4
Stack the baked wheat and buckwheat pancakes, alternating and spreading each pancake with beaten raw eggs. Bake in the oven. Cut into portions when serving.
