Description
Crepes Suzette
Ingredients
- Oranges - 1 piece
- Wheat Flour - 3.5 oz
- Sugar - 3.5 oz
- Butter - 3.5 oz
- Farm fresh eggs - 2 pieces
- Milk - 8 fl oz
- Liqueur - 2 fl oz
Step by Step guide
Step 1
For the crepes, mix the flour and sugar (50 g). Gradually add the milk, stirring until smooth. Then add the eggs one at a time, continuing to mix. Finally, add the liqueur (30 g) and melted butter (50 g) to the batter.
Step 2
Cook the crepes in butter or sunflower oil. I made 11 crepes (using a 24 cm pan).
Step 3
Next, melt the butter (50 g) in the pan and place the crepes folded in half. Sprinkle them with sugar (50 g) and fold them into quarters. Sauté the crepes briefly, add the liqueur (30 g), and flambé (or not). Then pour in the orange juice, sprinkle the crepes with orange zest, and wait for the juice to evaporate.
Step 4
Ready! Serve the crepes on a plate and drizzle with the remaining sauce if desired.
