Crepes filled with cottage cheese and drizzled with balsamic cream.

Ingredients

  • Wheat Flour - 8.8 oz
  • Chicken Egg - 3 pieces
  • Milk - 17 fl oz
  • Cottage cheese - 10.6 oz
  • Sugar - 3.5 oz
  • Dried Apricots - 5.3 oz
  • Cognac - 1 fl oz
  • Ghee - 1.8 oz
  • Salt - a pinch
  • White Balsamic Cream - to taste

Step by Step guide

Step 1

Whisk the eggs with salt and half of the sugar, then add 100 ml of milk and mix well. Gradually add the flour and knead the dough until smooth and free of lumps, then incorporate the remaining milk.

Step 2

Heat the skillet and grease it with oil. Pour the batter evenly over the surface in a thin layer. Brown the pancakes on only one side.

Step 3

Place the pancakes on a board with the golden side facing up. On each pancake, add a tablespoon of cottage cheese mixed with sugar and finely chopped dried apricots (soaked in brandy for ten minutes).

Step 4

Fold the pancakes into an envelope shape, brush with butter, and bake in the oven at 356°F for seven minutes. Serve with balsamic cream.
