Ingredients

  • Olive Oil - 1 tablespoon
  • Onion - 1 head
  • Garlic - 2 cloves
  • Butter - 1 tablespoon
  • Fresh Mushrooms - 8.8 oz
  • Chopped Sage Leaves - 1 tablespoon
  • Fresh basil leaves - 4.2 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Medium-dry sherry - 2 tablespoons
  • Thin Crepes - 4 pieces
  • Balsamic Vinegar - ¼ cup
  • Goat cheese - 2.6 oz

Step by Step guide

Step 1

In a skillet, heat the olive oil and add the thinly sliced onion, sautéing until golden brown for 5-8 minutes.

Step 2

Add the minced garlic and cook for another minute.

Step 3

Add the butter, melt it, then add the thinly sliced mushrooms, thyme, salt, and pepper. Cook until the mushrooms begin to caramelize.

Step 4

Add the sherry, let it evaporate, then add the spinach leaves. Cook for a few minutes until the spinach is wilted.

Step 5

Meanwhile, in a small saucepan, reduce the balsamic vinegar until it thickens slightly into a sauce.

Step 6

On each crepe, place some of the mushroom mixture, sprinkle with goat cheese, and fold in half. Drizzle with the balsamic sauce on top.
