Ingredients
- Milk - 7 fl oz
- Wheat Flour - 7.1 oz
- Sugar - 2.6 oz
- Safflower Oil - 0 fl oz
- Baking Powder - 0.4 oz
- Chocolate eggs - 2 pieces
- Bourbon - 0 fl oz
- Butter - 4.4 oz
- Maple syrup - 2 fl oz
- Bacon - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
First, carefully separate the egg whites from the yolks (2 eggs). At home, we like to separate them using our fingers. Of course, you need to wash your hands thoroughly, but this method has always worked for us.
Step 2
Mix the yolks with salt, then add room temperature milk and sunflower oil.
Step 3
Combine the flour with the baking powder and gently fold it into the milk and egg mixture. Stir until you achieve a creamy texture.
Step 4
Add sugar (50 g) to the egg whites and beat until stiff peaks form! It's best to use a mixer to achieve the right texture, but you can use a whisk — it's a workout for your arm muscles.
Step 5
Next comes the most interesting and important part: carefully fold the whipped egg whites into the milk-flour mixture using a spoon, incorporating them with broad, airy motions from the bottom up. This way, the whites won't collapse and will add maximum bubbles to the batter! Then cover the batter with a towel and let it rest for 30 minutes at room temperature.
Step 6
Cook the pancakes on a dry, hot skillet. Check that the skillet is properly heated: you can drop a small amount of water on it, and it should evaporate. Just be careful! We make large pancakes, using about 2 tablespoons of batter, resulting in a circle with a diameter of 13–14 cm. Cook the pancakes with love until they are golden brown.
Step 7
Melt sugar (25 g) in a heavy-bottomed saucepan over medium heat, stirring constantly. First, ensure that the sugar crystals are completely dissolved, then wait for the caramel to reach a golden-brown color.
Step 8
Add 10 grams of butter to the hot caramel and gently stir until smooth.
Step 9
Carefully pour it onto parchment paper and let it cool at room temperature.
Step 10
Once completely cooled, crush the caramel by tapping it with a spoon or using a thick knife.
Step 11
Beat room temperature butter with a mixer, add bourbon and the crushed caramel.
Step 12
Shape the butter into a log, wrap it in plastic wrap, and place it in the refrigerator. This butter can be stored in the freezer and thawed gradually for making criminal pancakes.
Step 13
To fry a good sunny-side-up egg, take any skillet, heat it up, add a piece of butter, and start frying the eggs over medium heat. It's better not to cover it with a lid so the yolk doesn't cook through. Season the egg with salt and pepper to your taste. Fry 2 eggs at a time for one serving of pancakes.
Step 14
Fry the bacon until crispy.
Step 15
Top the pancakes (2 pieces per serving) with the sunny-side-up egg, bacon, and most importantly — a piece of bourbon butter and maple syrup!
