Ingredients
- Wheat Flour - 2½ cups
- Butter - 3.5 oz
- Sugar - 3.5 oz
- Whole egg - 1 piece
- Baking Powder - ½ teaspoon
- Raspberry gin - 10 teaspoons
Step by Step guide
Step 1
Whisk the egg yolks with sugar until small bubbles form.
Step 2
Melt the butter, then pour it into the egg and sugar mixture.
Step 3
Sift the flour, add the baking powder, then pour our mixture into the flour.
Step 4
Knead the dough for about 10 minutes, wrap it in plastic wrap, and refrigerate for 1–2 hours.
Step 5
Cut the dough into 10–12 pieces and form balls.
Step 6
Make an indentation in each ball and add a teaspoon of raspberry jam, or you can use fresh raspberries! Even better — they will spread less. Seal the indentation and form the ball again, but now with jam inside. Place on a baking sheet greased with butter, seam side up.
Step 7
Before sending to the oven (preheated to 428°F), you can sprinkle the cookies with poppy seeds or black sesame seeds. Bake for 10–12 minutes.
