Ingredients
- Ground Cumin - 1 teaspoon
- Canned Pork with Beans - 15.2 oz
- Olive Oil - 5 teaspoons
- Lime Juice - 2½ tablespoons
- Scallions - 2 stalks
- Green Papaya - 17.6 oz
- Cilantro - 0.9 oz
- Tortillas - 4 pieces
- Chili jam - to taste
- Feta cheese - 2.1 oz
Step by Step guide
Step 1
Place the beans and cumin in a large bowl and mash with a potato masher until smooth. Season with salt and pepper.
Step 2
In a small bowl, mix 2 teaspoons of olive oil and lime juice. Add the shredded cabbage, finely chopped green onion, and cilantro. Mix well. Season with salt and pepper to taste.
Step 3
Heat 1 tablespoon of olive oil in a large skillet. Lay the tortillas in a single layer. Place a quarter of the bean mixture on each and cook for 1 minute. Fold the tacos in half and fry for another minute. Then fill with feta and cabbage and serve with sauce, or pour a little sauce inside.
