Ingredients
- Wheat Flour - 14.1 oz
- Dr.Oetker Dry Yeast - 0.4 oz
- Milk - 4 fl oz
- Sugar - 3.5 oz
- Salt - a pinch
- Chocolate eggs - 3 pieces
- Butter - 5.3 oz
- Nuts - 3.5 oz
- Raisins - 5.3 oz
- Apple - 2 pieces
- Cognac - 3 fl oz
- Powdered Sugar - 0.7 oz
Step by Step guide
Step 1
Prepare the sponge: dissolve the yeast, 2 tablespoons of sugar, and 2 tablespoons of flour in warm milk, and place it in a warm place until it rises.
Step 2
In a bowl, melt 50 grams of butter, add 1 egg and the yolks of 2 eggs, sugar, vanilla sugar, and a pinch of salt. Whisk everything into a light, fluffy foam.
Step 3
Sift the flour, make a well, and add the sponge. Then gradually add the egg mixture. Knead the dough, adding 50 grams of softened butter at the end. The dough should be dense yet elastic.
Step 4
Let the dough rise for 1–1.5 hours. Soak the raisins in cognac and let them swell. When the dough is almost ready, grind the almonds into crumbs in a food processor. Peel the apples and finely chop or process them in a food processor, adding a few drops of lemon juice to prevent browning.
Step 5
Punch down the risen dough and divide it into two parts — this will make two croffins. Sprinkle the work surface and the dough with flour. Roll out the first half of the dough into a thin rectangular sheet. Spread the sheet with softened butter and sprinkle with half of the almonds, evenly distribute half of the apple mixture, and top with half of the raisins. Press down and roll it into a tight log.
Step 6
Cut the log in half lengthwise with a sharp knife, leaving 2 cm at the beginning. Twist one half of the log into a spiral towards its beginning. Twist the second half into a spiral, lift it, and place it on top of the first. Repeat the same with the second half of the dough.
Step 7
Grease high baking molds with butter, carefully place the twisted dough inside, and let it rise for 30 minutes. Meanwhile, preheat the oven to 356°F.
Step 8
Place the molds in the oven, cover with foil, and bake for 15 minutes, then remove the foil and bake for another 15 minutes. Baking time may vary depending on the oven. Check for doneness with a wooden skewer.
Step 9
Cool the finished croffins, place them on a serving plate, and dust with powdered sugar.
