Croissants from Ready-made Puff Pastry

Ingredients

  • Cottage cheese - 3.5 oz
  • Puff Pastry - 2 lbs
  • Sugar - 2 tablespoons
  • Milk - 1 tablespoon
  • Chocolate - 3.5 oz

Step by Step guide

Step 1

Take the dough and place it with the shorter side facing you. To make it easier to work with, cut it in half across — while working with one half, keep the other in the refrigerator. Roll it out into a rectangle about 50x25 cm, with a thickness of about 4 mm, with the longer side facing you. Shake off any excess flour. Using a sharp knife (or even better, a pizza cutter), cut out triangles for the croissants with a base of about 10 cm. Always cut from the base to the tip to avoid deforming the dough.

Step 2

Now we need to stretch our blanks a bit so that there are more 'layers' when rolling them into croissants. First, stretch the base slightly to the sides, and then, holding it in the air with one hand, delicately stretch it lengthwise with the other hand — from top to bottom. The length should increase by about twice. Place the cottage cheese filling in the middle, roll it up, pinch the edges slightly, and continue rolling — using the backs of your hands. The formed croissant should have at least six 'segments.'

Step 3

Place the croissants (not too close together, anticipating that they will at least double in size) on a baking sheet lined with parchment paper dusted with flour. Brush with egg yolk, and send them to a preheated oven at 392°F for 25–30 minutes.

Step 4

Ten minutes before the croissants are ready, melt the chocolate in a water bath.

Step 5

Remove the croissants from the oven, serve them in portions, and drizzle with chocolate.
