Ingredients
- Puff Pastry - 17.6 oz
- Wheat Flour - ⅓ tablespoon
- Chicken Egg - 1 piece
- Potato protein - 0.2 tablespoon
- Milk - ½ cup
- Sugar - ⅓ cup
- Butter - 2.5 oz
- Ground Cinnamon - 1 teaspoon
- Powdered Sugar - 2 teaspoons
Step by Step guide
Step 1
Cut the dough (rectangular sheet) into triangles without rolling it out, and roll them starting from the wide end. You can slightly moisten the tip of the dough with water to help it stick better. Place the croissants on a baking tray previously greased with vegetable oil.
Step 2
Melt half of the butter over heat, add the vanilla powdered sugar and cinnamon. Brush the risen croissants with the resulting mixture to make them golden and fragrant. The amount of powdered sugar and cinnamon can be adjusted to taste.
Step 3
For the custard, mix the egg and sugar in a saucepan, add the flour and starch, then the milk. Keep on low heat, stirring constantly to avoid lumps. When the first bubbles appear, remove from heat. The custard should thicken and have a consistency similar to liquid sour cream. When the custard cools (to room temperature), incorporate the remaining butter cut into small pieces. You can whip the butter slightly beforehand.
Step 4
Transfer the custard to a glass bowl, place the croissants on a plate, and serve. You can use a pastry syringe to fill the croissants with custard by making small holes with a thin knife. Both ways turn out very delicious.
