Ingredients
- Plums - 7.8 oz
- Strawberry - 1.1 oz
- Unsalted peanuts, shelled - 1.1 oz
- Wheat Flour - 1 tablespoon
- Muesli - 3.2 oz
- Ground Cinnamon - ½ teaspoon
- Sugar - ¼ cup
- Butter - 0.7 oz
- Clove - 1 piece
- Rice Sweet Wine - 1 fl oz
Step by Step guide
Step 1
Wash the plums, cut them into quarters, and remove the pits. Remove the stems from the strawberries and slice them lengthwise.
Step 2
For the crumble filling, combine 150 ml of water, sugar plus one more tablespoon, add ¼ teaspoon of ground cinnamon and one clove in a saucepan. Bring the syrup to a boil over medium heat until the sugar dissolves, then add the plums and wine and simmer without reducing the heat for 10–15 minutes until the fruit is soft (but not mushy). Remove from heat and transfer the cooked plums to a bowl along with the remaining syrup. Slightly break the plums into smaller pieces with a spoon (the cooked plums are easy to break).
Step 3
For the crumb topping, mix the muesli, flour, ¼ teaspoon of ground cinnamon, and pistachios, add the softened butter and rub it into the dry ingredients until the butter is absorbed.
Step 4
Fill the ramekins with the filling: the bottom layer with strawberries, the middle layer with plums. Pour the remaining plum syrup over both layers. Top with the muesli and pistachio crumble and bake in a preheated oven at 374°F for 25 minutes. Remove, let cool slightly, and serve with a scoop of pistachio ice cream.
