- Butter - 5.8 oz
- Brown Sugar - 5.8 oz
- Wheat Flour - 9.5 oz
- Hazelnut - 5.3 oz
- Egg white - 6 pieces
- Sugar - 2.1 oz
- Custard - 2 teaspoons
- Milk - 8 fl oz
- 33% Cream - 8 fl oz
- Cocoa Powder - 1 tablespoon
- Vanilla Pod - 1 piece
- Liquid dark chocolate - 2.1 oz

Preheat the oven to 356°F.
Step 2
First, prepare the crumbs. In a bowl, mix softened butter, cocoa, brown sugar, and flour with your fingers until the mixture resembles coarse crumbs. Add the toasted and chopped hazelnuts. Evenly spread the mixture in a large baking dish (approximately 33 by 23 cm) and bake for 30–35 minutes until a golden crust forms.
Step 3
Meanwhile, prepare the custard with the remaining ingredients. In a large bowl, whisk the yolks, sugar, and custard concentrate, and set aside. Pour the milk and cream into a heavy saucepan. Split the vanilla pod lengthwise, scrape out the seeds, and add them to the saucepan along with the pod. Add the chopped chocolate. Bring to a boil.
Step 4
Slowly add the hot milk and cream to the custard mixture, whisking, then pour it back into the saucepan and bring to a boil, stirring with a spatula. Cook on low to medium heat for about 5 minutes until the mixture thickens. Continuously stir with the spatula, scraping the bottom and sides of the saucepan.
Step 5
Break the crumb cake into large pieces and divide it among 6 small bowls. Pour the custard into a pitcher and then drizzle it over the crumbs.
