Cupcake with Dried Fruit and Nuts

Ingredients

  • Butter - 7.1 oz
  • Sugar - 5.3 oz
  • Farm fresh eggs - 4 pieces
  • Raisins - 5.3 oz
  • Dried Apricots - 3.5 oz
  • Prunes - 3.5 oz
  • Nuts - 5.3 oz
  • Wheat Flour - 10.6 oz
  • Baking Powder - 3 teaspoons

Step by Step guide

Step 1

Soak the dried fruits in hot water for 15 minutes (this will soften them and remove any harmful store processing).

Step 2

Cut the butter into cubes and cream it with the sugar.

Step 3

Crack the eggs into the same bowl and mix. Set the mixture aside. Rinse the dried fruits and cut them into small cubes (except for the raisins).

Step 4

Chop the nuts using any convenient method. Add the dried fruits and nuts to the bowl with the batter.

Step 5

Sift the flour with the baking powder and knead the dough; it should be like very thick sour cream. Do not overdo it with the flour.

Step 6

Grease the cupcake mold with butter, line it with parchment paper, fill it with the batter, and place it in a preheated oven at 356°F for 50 minutes.

Step 7

As soon as a skewer comes out of the batter dry, the cupcake is ready.
