Ingredients
- Chicken Egg - 1 piece
- Milk - 2 fl oz
- Sour Cream - 2 tablespoons
- Wheat Flour - 5.3 oz
- Sugar - 3.5 oz
- Baking Powder - 1 teaspoon
- Salt - a pinch
- Butter - 5.3 oz
- Activated Baking Soda - a pinch
- Vanillin - to taste
- Frozen black currant puree - 5.3 oz
- White Chocolate - 4.4 oz
- Semi-soft cream cheese - 5.3 oz
- Powdered Sugar - 5.3 oz
Step by Step guide
Step 1
Dough: Sift the flour with baking powder and baking soda. Gently fold in the sour cream, egg, milk, sugar, and vanillin. Mix everything and let it sit for about 10-15 minutes.
Step 2
Preheat the oven to 320°F. Pour the batter into each mold up to 3/4 full. Place in the preheated oven and bake for 20-25 minutes, checking for doneness with a wooden stick.
Step 3
Filling: Blend 125 grams of blackcurrants with a blender until pureed. Melt the white chocolate in a water bath. Pour the fruit puree into the chocolate and mix until smooth.
Step 4
Remove the finished muffins from the oven, let them cool, cut out the center from each muffin, and fill them with the filling.
Step 5
Cottage Cheese Cream: Blend the remaining blackcurrants with powdered sugar, cottage cheese, and softened (room temperature) butter. Whip until smooth.
Step 6
Use a pastry syringe to decorate the finished muffins with the cream.
