Ingredients

  • Butter - 5.3 oz
  • Sugar - 5.3 oz
  • Whole egg - 4 pieces
  • Wheat Flour - 5.3 oz
  • Lime Juice - 2 pieces
  • Baking Powder - ½ teaspoon
  • Coconut flakes - 2 tablespoons
  • Egg white - 3 pieces
  • Powdered Sugar - 5.3 oz

Step by Step guide

Step 1

Preheat the oven to 392°F. Place paper liners in a special cupcake tray. Beat the butter with sugar using a mixer until frothy. Mix the egg yolks with the lime juice (reserve 1 tablespoon for the meringue), zest, and flour. Add the baking powder and coconut flakes. Quickly mix everything, fill the liners, and bake in the oven for about 20 minutes until golden.

Step 2

For the meringue, beat the egg whites with 1 tablespoon of lime juice using a mixer. While continuing to beat, gradually add the powdered sugar and whip until a thick consistency is achieved.

Step 3

Spread the meringue mixture over the cupcakes and return to the oven for another 5–10 minutes to brown the meringue.
