- Egg white - 4 pieces
- Butter - 5.3 oz
- Sugar - 5.3 oz
- Candied fruits - 1.8 oz
- Raisins - 1.8 oz
- Vanilla salt - 0.9 oz
Step by Step guide
Step 1
The cottage cheese for making the custard Easter cake should be smooth and free of lumps. Therefore, it should be passed through a meat grinder (possibly twice) and then strained through a sieve twice.
Step 2
Remove the butter from the refrigerator, cut it into pieces, and leave it at room temperature for 15-20 minutes to soften, then cream the butter with sugar until light and fluffy.
Step 3
Mix the cream with the egg yolks, place over a water bath, and heat while stirring until thickened.
Step 4
Soak the raisins in hot water for 15 minutes. Then drain and dry the raisins with paper towels.
Step 5
Combine the cream, butter, cottage cheese, and vanilla sugar, then add the raisins and candied fruits, mixing everything thoroughly.
Step 6
Line a mold with cheesecloth and fill it with the mixture, then place it under a weight in the refrigerator for at least three days.
