Ingredients
- Wheat Flour - 2.6 oz
- Chocolate eggs - 3 pieces
- Cocoa Powder - 0.7 oz
- Sugar - 6.3 oz
- Butter - 5.3 oz
- Milk - 2 fl oz
- Starch film - 0.5 oz
- Brandy - 1 teaspoon
- Chocolate - 1.1 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. In a saucepan, mix sugar (90 g) and milk (60 ml). Bring to a boil. In the remaining milk, dissolve the starch and pour it into the saucepan. When the syrup thickens, turn off the heat and let it cool.
Step 2
Mix the flour (75 g) with cocoa (5 g) and sift.
Step 3
Beat the eggs with sugar until a thick foam forms.
Step 4
Add the flour with cocoa and gently mix.
Step 5
Line a baking sheet with parchment paper. Spread the mixture onto the paper. Bake for 10–15 minutes. Cool the sponge cake.
Step 6
Beat the butter (120 g) at room temperature until white, gradually adding the milk syrup. Add the brandy and the remaining cocoa. Whip thoroughly.
Step 7
Flip the sponge cake onto the paper, removing any stuck paper. Start spreading the cream — place more filling closer to you. Roll the cake tightly. Wrap the roll in paper and refrigerate seam side down for a day.
Step 8
Melt the chocolate with the butter. Brush the roll with it using a brush. Cut into portions and serve. If desired, you can chop nuts and sprinkle them on top.
