Description
In Old Town Square in Prague, there are almost more stalls selling these pastries than souvenir shops. Trdelníks spin over hot coals, enticing crowds of tourists with their aroma. For those who want to make them in their own kitchen, a special spit is replaced with rolling pins, metal tubes, and other simple tools. But the result is worth it.
Ingredients
- Wheat Flour - 22.9 oz
- Cinnamon - 1.8 oz
- Nuts - 3.5 oz
- Butter - 3.5 oz
- Chicken Egg - 2 pieces
- Milk - 1 glass
- Dry yeast - 1.1 oz
- Fine white sugar - 6 teaspoons
Step by Step guide
Step 1
Prepare a yeast mixture using yeast, a quarter cup of warm water, one teaspoon of flour, and one teaspoon of sugar. Place it in a warm spot and let it rise (this will take about twenty to twenty-five minutes). Separate the egg whites from the yolks.
Step 2
In a small saucepan, melt the butter over low heat, then transfer it to a deep bowl and mix it with the milk and two egg yolks. Combine this mixture with the remaining flour and the pre-ferment. Add a scant cup of sugar (setting aside about a tablespoon for sprinkling) and salt.
Step 3
Knead a soft and elastic dough with your hands. Place the bowl in a warm spot, cover it with a damp cloth, and allow the dough to rise at least twice.
Step 4
Divide the prepared dough into several equal parts and roll each one out. Then, use a sharp knife to cut each rolled-out piece into long strips about 5 cm wide.
Step 5
Wrap each strip around the base, overlapping them. (At home, you can use a rolling pin or sturdy cardboard tubes covered with foil for this purpose.) Tuck the edge of the dough neatly underneath.
Step 6
Using a pastry brush, thoroughly coat the egg-wrapped dough on all sides with egg whites. Preheat the oven to 392°F.
Step 7
Make a mixture of ground nuts, a tablespoon of sugar, and cinnamon, spread it on a flat plate, and roll the dough in this mixture. Place the dough bases on a small baking tray and put them in the oven.
Step 8
Bake the buns for about twenty minutes, turning them a couple of times to ensure they brown evenly on all sides. Remove the finished buns from the oven, let them cool slightly, and then take them off the baking tray. Arrange them on a plate and dust with powdered sugar. Serve warm.
