Ingredients
- Milk - 20 fl oz
- Dried Chamomile - 1 tablespoon
- Sugar - 5 teaspoons
- Gelatin - 1.1 oz
- Hazelnut - 1.1 oz
- Almond - 4 spoons
- Oat flakes - 1.1 oz
- Sea Buckthorn - 2.8 oz
- Butter - 1 tablespoon
- Honey - 5 teaspoons
- Salt - to taste
Step by Step guide
Step 1
Bring the milk to a boil, add 3 tablespoons of sugar and dried chamomile. Cover with a lid for 20 minutes to enhance the flavor of the milk. Soak the gelatin in cold water.
Step 2
Strain the chamomile milk, add the squeezed gelatin, and stir, bringing it almost to a boil. For flavor balance, you can add a pinch of salt.
Step 3
Pour the prepared mixture into molds or a single container, and chill in the refrigerator for a few hours.
Step 4
For the caramelized nuts, roughly chop the hazelnuts and almonds with a knife, toast them in a dry skillet, then add the rolled oats and butter. Heat until fragrant. Add half of the honey, warm it up, and then add the remaining sugar. Spread the mixture onto a baking sheet lined with parchment paper and bake in the oven for 5–8 minutes at a moderate temperature. The nuts should turn a nice golden brown. Once the caramel mixture is ready, let it cool and break it into pieces.
Step 5
Warm the sea buckthorn with the remaining honey, blend it with a blender, strain through a sieve, and cool.
Step 6
Layer the caramelized nuts, chamomile jelly, and sea buckthorn sauce in a jar or any other mold. You can also serve some sauce on the side.
