Dark Christmas Indian Pudding
Ingredients
- Red Currant - 10.6 oz
- Raisins - 10.6 oz
- Wheat Flour - 4.2 oz
- Salt - 1 teaspoon
- Grated Ginger Root - 1 teaspoon
- Ground Nutmeg - 1 teaspoon
- Ground Cinnamon - 1 teaspoon
- Ground clove - ½ teaspoon
- Margarine - 8.5 oz
- Breadcrumbs - 4.2 oz
- Sugar - 4.2 oz
- Ground dried cherries - 2.1 oz
- Chopped almonds - 2.1 oz
- Orange zest - 0.5 oz
- Citrus Zest Mix - 0.5 oz
- Orange zest - 1 piece
- Farm fresh eggs - 2 pieces
- Vinegar essence - 1 teaspoon
- Black licorice - 6 tablespoons
- Brandy - 1 tablespoon
Step by Step guide
Step 1
In a bowl, mix the currants and raisins. Add the chopped cherries, some crushed almonds, and finely chopped zest.
Step 2
In another bowl, combine the flour, salt, and spices. Mix in the grated margarine, breadcrumbs, and sugar.
Step 3
Combine both mixtures.
Step 4
Squeeze the juice from the orange and whisk it with the eggs and vanilla. Add the treacle and brandy and whisk again.
Step 5
Add the egg mixture to the other ingredients and gently mix.
Step 6
Pour the batter into a greased pudding mold, cover with greased paper, and cook in a steamer until done.
Step 7
Remove the paper, cover with a new sheet. Serve warm.
Step 8
Before serving, drizzle with brandy.
