Description

Do not substitute 33% cream with lower fat cream — the caramel will not thicken. For preparation, use a pot with high sides and a thick bottom, otherwise everything will burn. Mix all ingredients very carefully, otherwise burns are guaranteed, as everything is boiling and bubbling.

Ingredients

  • Sugar - 10.6 oz
  • 33% Cream - 11 fl oz
  • Butter - 2.3 oz

Step by Step guide

Step 1

Melt the sugar in parts over medium heat in several batches — first melt 50 grams (do not stir! otherwise lumps will form that will not melt and will remain in the caramel, disrupting the product's consistency), then continue with the rest. Watch that the sugar does not overheat, cook everything over medium heat, otherwise the sugar will burn and the caramel will be bitter.

Step 2

Add the butter and carefully stir (the mixture will start to bubble).

Step 3

Then add well-heated cream, stirring gently until smooth. The cream must be well-heated (do not bring to a boil): if you pour cold cream into melted sugar, the temperature difference will cause everything to curdle.

Step 4

Add a pinch of salt.

Step 5

Cook for 3–4 minutes.

Step 6

After cooking, cool the caramel to room temperature in the pot it was made in, and only then transfer it to a jar for storage. Store in the refrigerator.
