Ingredients
- Fresh Mint - 1 bunch
- White Chocolate - 9.9 oz
- 10% cream - 10 fl oz
- Lemon-Pepper Mix - ¼ teaspoon
- Gelatin - 3 tablespoons
- Sugar - 3 tablespoons
- Pear Jam - 7.1 oz
- Fresh Berries - 7.9 oz
Step by Step guide
Step 1
For the mousse, melt the chocolate in a water bath.
Step 2
Whip the cream with a mixer until soft peaks form and add pepper.
Step 3
Tear the mint by hand (set aside a few leaves), and add it to the cream.
Step 4
Let the melted chocolate cool slightly and gently pour it into the cream while mixing and lightly whipping with the mixer.
Step 5
Pour the mousse into glasses and refrigerate for 20–30 minutes.
Step 6
Garnish the chilled mousse with mint leaves.
Step 7
For the jelly, boil the berries in 100 ml of water for 5 minutes.
Step 8
Dissolve 2 tablespoons of gelatin in 3 tablespoons of warm water. Place over medium heat and warm, stirring, without bringing to a boil. Let it cool.
Step 9
Soak the remaining gelatin in 2 tablespoons of water. Once it swells, mix it with the berries. Place in glasses and refrigerate until fully set. Distribute into 6 glasses and refrigerate for 30 minutes.
Step 10
Layer as follows: berry jam, mousse, and the jelly, garnish with a sprig of mint and serve.
