- Wheat Flour - 3.5 oz
- Chocolate eggs - 4 pieces
- Sugar - 7.4 oz
- Chestnut puree - 26.8 oz
- Semi-soft cream cheese - 5.6 oz
- 10% cream - 5 fl oz
- White Chocolate - 7.4 oz
- Gelatin - 1 oz
- Red Food Coloring - 0.1 oz
- Glucose Powder - 2.1 oz
- Vanilla salt - 0 oz
Step by Step guide
Step 1
Prepare the sponge cake: beat the eggs and 100 grams of sugar until smooth, then add the flour and beat again. Pour the mixture into a mold and bake in a preheated oven at 356°F for 5–6 minutes, then remove and let cool.
Step 2
For the strawberry mousse, take 460 grams of strawberry puree and 110 grams of sugar and heat them. Soak 17 grams of gelatin and add it to the strawberry puree. Then blend the cream cheese and cream with a blender. Melt the white chocolate in a water bath and add it to the cream cheese and cream mixture. Finally, combine the ingredients, add the food coloring, and mix everything together. Leave in the refrigerator to cool the mousse.
Step 3
For the strawberry jelly, take 300 grams of strawberry puree and glucose, warmed in a saucepan. Soak 10 grams of gelatin and mix it with the puree, add vanilla, knead, and strain through a sieve.
Step 4
Pour 400 grams of strawberry mousse into a mold, let it cool, then pour in the strawberry jelly, cover with sponge cake, repeat with the strawberry mousse and again with sponge cake, let it cool, and after cooling, add the strawberry jelly.
Step 5
Let the dessert cool, decorate with fresh strawberries on top, and refrigerate overnight.
