  • Whipped Cream - 7 fl oz
  • Lemon - 1 piece
  • Powdered Sugar - 1.8 oz
  • Sponge Cake Base - 5.3 oz
  • Dark rum - 1 fl oz
  • Raw cane sugar - 4.2 oz
  • Raisins - 2.8 oz

Step by Step guide

Step 1

To make the syrup, take the rum, sugar, and 100 ml of water, bring to a boil, and cook for 1-2 minutes until syrupy, then add the raisins and let steep.

Step 2

Mix the cream and powdered sugar, add lemon juice, and whip well.

Step 3

Place a layer of sponge cake at the bottom of martini glasses, then pour in the syrup with raisins, and top with a thick layer of whipped cream.

Step 4

Garnish with lemon zest and chill.
