Diabetic Chocolate Mousse Cake
Ingredients
- Bittersweet Chocolate - 23.8 oz
- Butter - 15.9 oz
- Fructose - 23.8 oz
- Chocolate eggs - 10 pieces
Step by Step guide
Step 1
Melt the bittersweet chocolate (broken into smaller pieces; it's best to use chocolate with minimal sugar content – there are options available with nearly 99% cocoa) and the butter in a water bath. Let it cool for about 10 minutes.
Step 2
Whisk the fructose and eggs together until smooth (DO NOT WHIP INTO A FOAM!).
Step 3
Gradually add the egg mixture to the slightly cooled chocolate mixture in 2-3 additions. Stir until smooth.
Step 4
Preheat the oven to 320°F.
Step 5
Grease the baking pan and line the bottom with greased parchment paper. Fill the pan with the mixture to 2/3 of its height. Place it in a water bath (water should reach 2/3 of the height of the pan) to ensure sufficient moisture in the finished cake. Put it in the preheated oven.
Step 6
Bake for 55 minutes, until the center is cooked through.
Step 7
Remove from the oven, let it cool to room temperature (at this point, you can CAREFULLY transfer it from the pan to a plate) and place it in the refrigerator. The next morning (or after it has completely cooled during the day), carefully remove it from the pan. And that's it! Cut into portions and serve.
