Diet Brownies with Mint Layer

Ingredients

  • Chicken Egg - 2 pieces
  • Rice Flour - 4.9 oz
  • Cocoa Powder - 4 tablespoons
  • Applesauce - 10.6 oz
  • Baking Powder - ½ teaspoon
  • Baking Soda - ½ teaspoon
  • Flower honey - 2 tablespoons
  • Sugar Substitute - to taste
  • Vanillin - to taste
  • Soft Cottage Cheese - 21.2 oz
  • Gelatin - 2 tablespoons
  • Fresh Mint - to taste
  • Water - 5 fl oz
  • Coconut Oil - 1 teaspoon

Step by Step guide

Step 1

Pour water over fresh mint leaves (I used about 15 large ones - the larger the leaves, the more intense the mint flavor) and puree in a blender until as smooth as possible.

Step 2

Strain the mint water from the ground leaves and pour it over the gelatin, leaving it to swell.

Step 3

In a deep bowl, combine applesauce, honey, cocoa powder, vanillin, and sugar substitute, mixing thoroughly until smooth.

Step 4

Separate the egg whites from the yolks.

Step 5

Beat the yolks with the sugar substitute until light and fluffy, then incorporate into the chocolate mixture, mixing well.

Step 6

Whip the egg whites until stiff peaks form, then fold in 1/3 of the egg whites into the chocolate mixture, gently mixing from the bottom up.

Step 7

In a separate bowl, mix the flour with the baking soda and baking powder, then sift the dry mixture into the chocolate mixture, mixing thoroughly.

Step 8

Fold in the remaining egg whites, gently mixing from the bottom up.

Step 9

Pour the batter into a rectangular baking dish, previously greased with coconut oil (the dish should be chosen so that the batter height is about 1.5 cm when filled) and bake in a preheated oven at 180°C (top-bottom mode) for 20-25 minutes.

Step 10

The finished brownies should be slightly moist when tested with a toothpick, but to prevent the sponge from collapsing, it is better not to open the oven door during baking and for at least 20 minutes after, so judge doneness visually. After that, remove the baking dish from the oven and let it cool.

Step 11

Thoroughly mix the soft cottage cheese with the sugar substitute.

Step 12

Heat the swollen gelatin in a water bath until fully dissolved (do not boil), let it cool slightly, then pour it into the cottage cheese and mix thoroughly. Due to the 'mint' water used to prepare the gelatin, the cheese mixture will take on a light green hue, but for a more intense color, I used powdered green food coloring (add the coloring in liquid form - dissolve a pinch of powder with a couple of drops of water, then mix it into the cheese mixture until the color is uniform).

Step 13

For a more intense mint flavor, mint essence can also be used.

Step 14

Pour the mint cheese mixture over the brownies, smooth it out with a spatula, and leave it in the refrigerator for a few hours until set.

Step 15

When the soufflé has set (after 1-1.5 hours), evenly sprinkle cocoa powder on top.

Step 16

Cut the finished dessert into portioned pieces.
