Diet Coconut Cheesecake with Raspberries
Ingredients
- Shredded Coconut - 7.1 oz
- Honey - 2.5 oz
- Egg - 1 piece
- Coconut Oil - ¼ cup
- Cream Cheese - 7.1 oz
- Coconut Sugar - ½ cup
- Raspberries - 7.1 oz
- Coconut cream - 8 fl oz
- Lime - 1 piece
- Gelatin - 0.7 oz
Step by Step guide
Step 1
Dissolve the gelatin in the amount of water specified on the package and let it swell for about 30 minutes.
Step 2
Preheat the oven to 356°F.
Step 3
Line the bottom of the cake pan with parchment paper.
Step 4
In a deep bowl, mix the shredded coconut, coconut oil, egg white, and sweetener. Mix well. Press the mixture into the bottom of the pan.
Step 5
Bake for about 20-25 minutes, then remove and let it cool completely.
Step 6
In a bowl, add the cream cheese, coconut sugar, blended berries, coconut cream, 1 tablespoon of lime juice, and lime zest, and mix well until smooth. Add the gelatin to the mixture.
Step 7
Pour the resulting mixture into the cooled baking pan and leave it in the refrigerator overnight.
Step 8
Garnish with berries.
