Description

This recipe yields 1 kulich with a diameter of 8.5 cm.

Ingredients

  • Chicken Egg - 2 pieces
  • Kefir - 2 fl oz
  • Semi-soft cream cheese - 4.2 oz
  • Oat flakes - 2.1 oz
  • Corn Flour for Polenta - 0.7 oz
  • Glutinous Rice Flour - 1.1 oz
  • Butter - 0.7 oz
  • Vanillin - a pinch
  • Activated Baking Soda - ½ teaspoon
  • Sugar Substitute - to taste
  • Cardamom - ⅓ teaspoon
  • Candied fruits - 1.8 oz
  • Citric Acid - 0 oz
  • Olive Oil - ½ teaspoon
  • Milk - 5 fl oz
  • Non-Fat Dry Milk - 2 tablespoons
  • Corn Starch - 1 teaspoon

Step by Step guide

Step 1

Separate the egg whites from the yolks.

Step 2

Add the cottage cheese, melted butter, kefir, and baking soda to the yolks - mix well and let sit for 5 minutes - the batter will start to foam slightly.

Step 3

Add the sugar substitute (I used stevia) and vanillin to the egg mixture.

Step 4

Grind the oat flakes into flour, combine with the other two types of flour (the total flour mixture should be one cup of 250 ml), add the baking powder and cardamom, and mix well.

Step 5

Pour the dry mixture into the wet mixture and mix well.

Step 6

Beat the egg whites with citric acid until stiff peaks form (add the citric acid when the whites are thick and white) and gently fold into the batter using an upward motion.

Step 7

Carefully add finely chopped candied fruits to the batter and mix well again.

Step 8

Grease the mold (I used one with a diameter of 8.5 cm) with olive oil and pour in the batter (it should fill about ¾ full).

Step 9

Bake in a preheated oven at 175°C for about 45-50 minutes (check for browning and use the 'dry toothpick' method).

Step 10

If the kulich is not fully baked but is already browning on top, cover the top with foil.

Step 11

For the glaze: mix the dry milk with starch and sweetener, you can add a pinch of vanillin.

Step 12

Pour in a few tablespoons of milk and mix until smooth, trying to eliminate lumps as much as possible.

Step 13

Pour in the remaining milk, beat well again, and place in the microwave at maximum power (I used 850 W) for about 3 minutes (remove and stir every minute, watching that the mixture doesn't overflow), then let it cool and spread on top of the kulich.

Step 14

Decorate as desired.
