Description

Oats can be replaced with flour, sugar substitute with sugar, and toppings to taste. Then it will be an ordinary non-diet muffin.

Ingredients

  • Cottage cheese - 7.1 oz
  • Oats - 1 cup
  • Natural Yogurt - 2 tablespoons
  • Butter - 2 tablespoons
  • Salt - a pinch
  • Sugar Substitute - to taste
  • Chicken Eggs - 2 pieces
  • Cinnamon - to taste
  • Ginger - to taste
  • Baking Powder - 1 teaspoon
  • Dried Apricots - 10 pieces
  • Peeled Hazelnuts - 1.8 oz

Step by Step guide

Step 1

It's better to grind the oats in a coffee grinder or blender for a more uniform batter. Mix with salt, baking powder, ginger, and cinnamon.

Step 2

Pass the cottage cheese through a sieve or use fine-grained cottage cheese, mix with eggs and yogurt, and add two tablespoons of melted cooled butter.

Step 3

Dissolve the sugar substitute in 1 teaspoon of boiling water and stir it into the cottage cheese mixture.

Step 4

Combine the cottage cheese mixture with the oats.

Step 5

Pour the batter into a greased baking dish, filling it one-third full, and layer the dried apricots or any other filling to taste, then add another layer of batter on top and sprinkle with nuts.

Step 6

Place in a preheated oven at 356°F for 30 minutes.

Step 7

The finished muffins can be decorated with toppings of your choice.
