Dietary Cake 'Potato'
Ingredients
- Chickpeas - 4.6 oz
- Banana - 1 piece
- Egg whites - 2 pieces
- Cocoa Powder - 2.3 tablespoons
- Honey - 2 tablespoons
- Roasted Peanuts - 1.8 oz
- Vanillin - a pinch
- Coconut Oil - 1 teaspoon
- Sugar Substitute - to taste
- Freshly Brewed Coffee - 1 fl oz
- Natural Yogurt - 4.2 oz
- Brandy - to taste
- Cottage cheese - 3.5 oz
Step by Step guide
Step 1
Soak dry chickpeas in room temperature water in a 1:4 ratio for 4 hours.
Step 2
Drain the water, add fresh water in a 1:3 ratio, bring to a boil, skim off the foam, and cook covered for another 40 minutes.
Step 3
Puree the cooked chickpeas with a blender, add the banana, yogurt (set aside 1 tablespoon for the cream), cocoa powder (set aside 1 teaspoon to sprinkle on top of the cakes), baking powder, vanillin, and sugar substitute, and blend everything together until smooth.
Step 4
Whip the egg whites to stiff peaks and gently fold them into the chickpea mixture using an upward motion.
Step 5
Pour the batter into any convenient mold, cover with foil, and bake in a preheated oven at 180°C (356°F) for 40 minutes, then remove the foil and bake for another 10 minutes (adjust according to your oven; the important thing is that the cake should be moist!).
Step 6
Grind the roasted peanuts into flour using a blender.
Step 7
Cool the cake and crumble it with a fork, add honey, coconut oil, a few drops of brandy flavoring, add the ground peanuts, and then gradually pour in the coffee in small portions until the desired consistency is achieved (the dough should not become too sticky or liquid and should hold together well).
Step 8
Shape the mixture into cakes (I made 10), sprinkle cocoa powder on top, and use a piping bag to add 2 drops of cottage cheese cream on each.
Step 9
For the cream, blend the cottage cheese with 1 tablespoon of yogurt, vanillin, and sugar substitute until smooth (I also added a couple of drops of vanilla flavoring), and place it in the freezer for 10 minutes to thicken.
