Dietary Cottage Cheese Lemon Muffins

Ingredients

  • Soft Cottage Cheese - 7.1 oz
  • Egg whites - 2 pieces
  • Chicken Egg - 1 piece
  • Corn Flour - 1.4 oz
  • Vanillin - a pinch
  • Stevia Extract - 1½ tablespoons
  • Lemon Zest - 3 teaspoons
  • Lemon Juice - 1 teaspoon
  • Olive Oil - ½ teaspoon
  • Muesli - 2 tablespoons

Step by Step guide

Step 1

Mash the cottage cheese with a fork.

Step 2

Add the egg and two egg whites to the cottage cheese.

Step 3

Add vanillin and stevia, and mix thoroughly with a mixer. Gradually add the flour and baking powder, mixing again with the mixer.

Step 4

Add the lemon zest and squeeze in a little lemon juice, mixing again.

Step 5

Evenly grease the muffin molds with a small amount of olive oil.

Step 6

Fill the molds with the batter about halfway, a little more.

Step 7

Sprinkle muesli on top.

Step 8

Bake in a preheated oven at 180°C for 30 minutes.
