Description

For pancakes, I usually use low-fat soft cottage cheese (up to 5%). This recipe also works for pancakes made with creamier (non-granular) cottage cheese. Instead of semolina, you can use flour. The calorie content of flour and semolina is the same, but for pancakes, I find semolina works better – the pancakes turn out fluffier. And in 1 tablespoon of flour, there are about 30 g, while in 1 tablespoon of semolina, there are 20 g. You can add pine nuts on top of the uncooked pancakes. You can also add dried berries (mix into the cottage cheese).

Ingredients

  • Semi-soft cream cheese - 8.8 oz
  • Chicken Egg - 1 piece
  • Semolina - 1 tablespoon
  • Stevia Extract - 0 fl oz
  • Baking Powder - 0.1 oz

Step by Step guide

Step 1

Crack the chicken egg, add semolina, baking powder (a pinch), and stevia (3 g of dry stevia is equivalent to 1 tablespoon of sugar). Blend with a mixer.

Step 2

Add cottage cheese to the mixture and stir.

Step 3

Preheat the air fryer (my Hotter preheats to 500°F in 6 minutes). I usually preheat for 4-5 minutes.

Step 4

While the air fryer is heating, place baking paper on the middle rack (I trim the edges of the sheet to fit the rack shape so that the long edges don’t curl and obstruct the hot air from cooking the pancakes). Place the cottage cheese balls on the paper and shape them as needed. This makes 8 pancakes. I do not coat them in flour.

Step 5

Place the rack with the pancakes in the preheated air fryer. Set it to low speed at 302°F for 20-23 minutes. Pancakes made with creamier cottage cheese (over 5%) turn out more golden.
