Ingredients
- Cottage cheese - 8.8 oz
- Bran - 1½ tablespoons
- Whole egg - 1 piece
- Natural Yogurt - 3 tablespoons
- Stevia Extract - to taste
- Citrus Zest Mix - 2 teaspoons
- Vanillin - a pinch
Step by Step guide
Step 1
Place the cottage cheese, 1 tablespoon of yogurt, egg yolk, and stevia to taste in a blender. Blend until smooth.
Step 2
Add the vanillin and ground oat bran. Blend again.
Step 3
Spoon the cottage cheese mixture into a silicone muffin mold to about 1/3 of its height or shape the pancakes by hand.
Step 4
Bake in a preheated oven at 356°F for about 30-35 minutes. Allow to cool completely.
Step 5
For the yogurt-lemon sauce, mix 2 tablespoons of yogurt, lemon zest, and stevia in a container.
