Doughnuts with Raspberry Filling
Ingredients
- Wheat Flour - 14.1 oz
- Sugar - 7.1 oz
- Cream - 2 fl oz
- Butter - 1.8 oz
- Chicken Egg - 1 piece
- Raspberry leaves - 10.6 oz
- Ground Cinnamon - a pinch
- Corn Flour for Polenta - 1 tablespoon
- Water - 1 cup
- Milk - 5 fl oz
- Powdered Sugar - to taste
- Dry yeast - 0.4 oz
- Meyer Lemon Juice - 1 tablespoon
- White Beans - ½ piece
Step by Step guide
Step 1
Mix the flour, yeast, and sugar in a bowl.
Step 2
Add warm milk, cream, butter, egg, cinnamon, a pinch of salt, and mix until you have a smooth dough.
Step 3
Cover the dough with a damp towel and place it in a warm place for an hour.
Step 4
Combine raspberries, sugar, lemon juice, vanilla seeds, and 80 ml of water in a saucepan. Cook over low heat, stirring gently, until the syrup becomes a deep color (30–40 minutes).
Step 5
Strain through a fine sieve (you should have about 300 ml of syrup).
Step 6
Mix 1 tablespoon of corn flour with 1 cup of cold water.
Step 7
Bring it to a boil, add the corn mixture, stir well, and cook for a couple of minutes. Now you can remove it from the heat and let it cool.
Step 8
Roll out the dough to a thickness of 1 cm and cut into pieces of 6 cm.
Step 9
Now these pieces can be fried until golden brown in a deep skillet in vegetable oil (175 degrees), (about 3–4 minutes on each side).
Step 10
Coat your doughnuts in powdered sugar and, while they are warm, make a slit in each on one side and add the filling.
Step 11
Serve the doughnuts warm.
