Description
Take the butter out in advance to soften it. You can soak the cherries in brandy yourself.
Ingredients
- Sugar - 14.1 oz
- Wheat Flour - 14.1 oz
- Cocoa Powder - 0.7 oz
- Baking Powder - 0.2 oz
- Butter - 10.6 oz
- Condensed Milk - 1 can
- Chocolate eggs - 12 pieces
- Cherries in Liqueur - 1 can
Step by Step guide
Step 1
Whip the egg whites until stiff peaks form. In a separate bowl, beat the yolks with sugar. Mix the flour with baking powder (you can substitute it with baking soda neutralized with vinegar) and gently fold in the egg whites. Add the yolks and knead the dough. Grease a round baking pan with butter and dust it with flour. Evenly spread the dough and bake at 356°F for about 40 minutes to 1 hour, depending on your oven. Do not open the oven for the first 30 minutes to prevent the cake from collapsing. Check for doneness with a toothpick.
Step 2
Remove the cake and let it cool. Carefully cut off the top to create a 'cap' (as shown in the picture). Remove the cake crumb and mix it with the softened butter, condensed milk, and cherries. To ensure the cake is fully soaked, I brew strong coffee and dip the inner edges and the 'cap' in it. Then, tightly pack the crumb mixture with cherries and cover it with the cut-off part of the cake.
Step 3
You can experiment with the frosting, but personally, I love it made from dark chocolate.
