Drunken Cherry Cake with Chocolate

Ingredients

  • Chocolate eggs - 14 pieces
  • Sugar - 9 cups
  • Cocoa Powder - 5.3 oz
  • Wheat Flour - 2 cups
  • Butter - 19.4 oz
  • Milk - 7 fl oz
  • Marinated cherries - 14.5 oz
  • Cognac - ½ cup
  • Sour Cream - 1 jar
  • Vanillin - 0.4 oz

Step by Step guide

Step 1

Prepare the cherries in advance. Remove the pits from the cherries, sprinkle with 1 cup of sugar, and pour with cognac. Leave for at least 2 days, stirring occasionally to dissolve the sugar.

Step 2

For the batter, beat 10 eggs and 2.5 cups of sugar in a water bath until thick foam forms (the mixture will double in volume). Remove from the water bath and continue beating until cool (the mixture will increase to 3–3.5 times its original volume). Mix the flour with cocoa powder and gently fold into the beaten eggs, stirring with a spoon from the bottom up. Pour the mixture into a greased and floured baking pan. Bake in a medium heat oven.

Step 3

For the cream, mix cocoa powder with 2 cups of sugar and milk, place over a water bath, and stir until the sugar dissolves. Beat the eggs with a whisk and gradually pour into the cocoa while mixing with a mixer. When it thickens slightly, remove from the water bath. Cream the soft butter (500 grams) with vanillin and 1 cup of sugar. Beat while gradually pouring in the cocoa.

Step 4

Cut the baked cake in half and carefully remove the crumb, leaving the walls and bottom intact. Mix the crumb with half of the cream and half of the cherries. Moisten the two remaining halves of the cake with the juice from the cherries, spread with cream, place 2/3 of the remaining cherries, and fill with the crumb mixture. Join the two halves, placing the remaining cherries between them. Seal the seam between the cakes with the remaining crumb.

Step 5

Pour chocolate over the top. Mix cocoa powder with 1 cup of sugar and sour cream, place over heat, and stir continuously. When bubbles appear, add a piece of butter, stir, and remove from heat.
