Ingredients

  • Farm fresh eggs - 3 pieces
  • Sugar - 2.6 oz
  • Citrus Zest Mix - ½ teaspoon
  • Salt - a pinch
  • Wheat Flour - 2.6 oz
  • Milk - 5 fl oz
  • Raspberry leaves - 12.7 oz
  • Serviceberries - 13.4 oz
  • Butter - 4 tablespoons
  • Powdered Sugar - to taste

Step by Step guide

Step 1

Preheat the oven to 450°F (229°C).

Step 2

In a small bowl, whisk the eggs with the zest, sugar, and salt. Add the milk and flour and whisk again until well combined. Fold in 1 cup of raspberries and blackberries.

Step 3

On medium heat, preheat an oven-safe skillet (10 inches in diameter) and add the butter. Pour in the batter and bake in the oven for about 22 minutes until the batter is set, golden brown, and puffed up. Transfer to a plate and dust with powdered sugar. Cut into segments and serve with the remaining fresh berries.
