Description
Easter bread with raisins and lemon zest
Ingredients
- Ground Almonds - 4 spoons
- Raisins - 8.8 oz
- Rum - 2 fl oz
- Lemon - 1 piece
- Butter - 8.8 oz
- Sugar - 8.8 oz
- Chicken Egg - 4 pieces
- Wheat Flour - 17.6 oz
- Baking Powder - 1 tablespoon
- Milk - 4 fl oz
Step by Step guide
Step 1
Grease the baking molds (the proportions of the ingredients allow for making 3 Easter cakes with a volume of about 700 ml each) with butter and sprinkle with almonds. Preheat the oven to 356°F, and soak the raisins in a small amount of rum. Squeeze the juice from the lemon and grate the zest.
Step 2
Whip the butter with the sugar until the sugar is fully dissolved. Add the eggs one at a time, mixing thoroughly after each addition.
Step 3
Add 3/4 of the zest and lemon juice, and mix again. Combine the flour with the baking powder. Gradually add a little milk and a little flour to the batter, mixing quickly. The batter should be thick, so it’s important not to add too much milk. Squeeze the raisins, dust them with flour, and fold them into the batter.
Step 4
Fill each mold with batter up to halfway and bake in the oven for about 60 minutes. Once the kulich is ready, let it cool and decorate with the remaining lemon zest.
