Easter Cake with Candied Fruits
Ingredients
- Cottage cheese - 35.3 oz
- Dried ground orange peel - 3.5 oz
- Candied Lemon Peel - 3.5 oz
- Ground Almonds - 1.8 oz
- Vanilla salt - to taste
- Butter - 7.1 oz
- Cream - 7 fl oz
- Egg white - 3 pieces
- Sugar - 1 cup
- Chopped almonds - 20 pieces
Step by Step guide
Step 1
Pass the fresh dry cottage cheese through a sieve. Mix half of the candied fruits, diced into small cubes, the peeled and chopped almonds, and vanilla.
Step 2
Whip the butter until pale and mix it with the cottage cheese. Warm the cream. Whip the egg yolks with sugar until frothy, slowly incorporating the cream into the eggs, then heat everything together, stirring constantly but not bringing it to a boil.
Step 3
Place the pot over a water bath and let it cool. Add the cottage cheese with candied fruits to the egg mixture and mix well.
Step 4
Line the Easter cake mold with a damp cloth and fill it with the mixture. Cover with a lid, place a weight on top, and refrigerate for 12 hours.
Step 5
Transfer the finished Easter cake to a plate and decorate with whole almonds.
