Ingredients
- Cottage cheese - 2 lbs
- Raisins - 3.4 oz
- Farm fresh eggs - 3 pieces
- Butter - 3.5 oz
- Sugar - 1 cup
- Lemon - 1 piece
- Cardamom - 2 pieces
- Salt - to taste
- Vanillin - to taste
Step by Step guide
Step 1
Place the cottage cheese in a fine sieve and press it into a large bowl to remove lumps.
Step 2
Add lightly beaten eggs, raisins, softened butter, sugar, grated lemon zest, and vanillin to the cottage cheese. Mix everything well and add a little salt to taste.
Step 3
Crush the cardamom seeds in a mortar and add them to the cottage cheese mixture. Mix well.
Step 4
Grease the Easter cheese mold with water and line it with cheesecloth or cotton fabric (optionally, create folds in the fabric so that the pattern is imprinted on the cheese).
Step 5
Spoon the cottage cheese mixture into the prepared mold and press it down firmly. Cover with the ends of the cheesecloth and place a weight on top. Set the mold in a cool place for 10-12 hours.
Step 6
Invert the mold onto a plate and remove the cheesecloth.
