Ingredients

  • Wheat Flour - 17.6 oz
  • Butter - 4.4 oz
  • Milk - 7 fl oz
  • Chicken Egg - 5 pieces
  • Whole egg - 1 piece
  • Vanilla Pod - 1 piece
  • Sugar - 11.6 oz
  • Raisins - 3.5 oz
  • Dry yeast - 1.2 oz
  • Sour Cream - 1.8 oz
  • Gelatin - 0.2 oz
  • Water - 1 fl oz
  • Meyer Lemon Juice - 1 fl oz
  • Blackberry - 1.1 oz
  • Thyme - 0.1 oz
  • Thyme - 0 oz
  • Salt - a pinch
  • Cardamom - a pinch

Step by Step guide

Step 1

Dissolve the yeast in warm milk, add half of the flour, and mix thoroughly until smooth. Cover with a towel and place in a warm spot.

Step 2

Mash 5 egg yolks with salt, 130 grams of sugar, vanilla, and cardamom.

Step 3

When the volume of the sponge doubles, add the mashed egg yolks.

Step 4

Whip 5 egg whites until stiff peaks form.

Step 5

Next, add the melted but not hot butter to the sponge, knead thoroughly, and then incorporate the egg whites and the remaining flour. Add raisins and sour cream to the dough. Continue kneading until the dough begins to pull away from your hands and the bowl.

Step 6

Place the kneaded dough in a warm spot and wait until it doubles in size.

Step 7

Grease the baking pans with oil.

Step 8

Divide the dough into the molds.

Step 9

Fill the molds with dough up to 1/3 full and place them in a warm spot, covering with a towel. Once the dough has risen and fills 3/4 of the mold, brush the top of the kulich with egg yolk.

Step 10

Place the kulich in a moderately hot oven for 50–60 minutes. Occasionally rotate the molds in the oven.

Step 11

The readiness of the kulich is determined by a thin wooden skewer: insert it into the kulich and pull it out. If it comes out dry, the kulich is ready. If it comes out wet, the dough is not fully baked yet.

Step 12

Prepare the glaze. Dissolve the gelatin in warm water.

Step 13

Stir in 200 grams of sugar and lemon juice.

Step 14

Spread the glaze over the finished kulich.

Step 15

Garnish with thyme, blueberries, and thyme.
